At Time + Tide, food is part of the journey and an invitation to experience your safari through flavour, texture, and colour. From the first coffee by the fire to the last spoon of dessert under the stars, each meal is shaped by the surroundings and the season.

Menus change daily and are built on what is fresh, local, and abundant. Zambia’s rich agricultural landscape offers an ever-evolving pantry, from wild honey and sweet summer fruits to river-caught fish and grass-fed beef. Our culinary team, led by Group Executive Chef Anton Rautenbach, works closely with farmers and producers across the country, championing sustainability and showcasing the very best of what Zambia has to offer.

Dining takes many forms across our camps. It might be breakfast cooked over the coals at sunrise, a long lunch beside the river, or an elegant three-course dinner in camp. You might find yourself out in the bush with a surprise table waiting under the trees or seated beside the fire as the Milky Way emerges overhead. Each setting is chosen with care, and each meal is thoughtfully prepared.

The children’s menu is carefully designed to delight younger palates, while dietary preferences and needs are met with creativity and ease. Whether it is something comforting and familiar or bold and new, our chefs listen and adapt.
